This is one of my all-time favorite recipes to take to parties. I love it for its flavor as much as its brilliant green color (I think I want to paint my bedroom this color). Of course you can make this with fresh fava beans. It will take a lot of patience to shell them, boil them and skin them. I’m all for cheating with frozen fava beans. Frozen fava beans are not that easy to find, but when you find them you can stock up and then throw this dip together quickly. I served it with toasted sliced baguettes.
1 package, 10 oz. frozen fava beans, thawed
¼ C chopped fresh mint (or more to taste)
1 clove garlic
1 green onion, sliced
Juice of one lemon
½ C olive oil
½ C grated parmesan cheese
1 T lemongrass mint vinegar (optional since it may be hard to find)
Salt and pepper to taste
Combine all ingredients in a food processor and blend until smooth. If the mixture is too thick to blend add some water one or two tablespoons at a time to get the right consistency. You can eat this right away make it several days before serving, it will hold for three or four days. I serve it with croutons, but it’s also great as a sandwich spread, or to serve alongside grilled meats.
Makes about 2 cups.
