1 package, 10 oz. frozen fava beans, thawed

¼ C chopped fresh mint (or more to taste)

1 clove garlic

1 green onion, sliced

Juice of one lemon

½ C olive oil

½ C grated parmesan cheese

1 T lemongrass mint vinegar (optional since it may be hard to find)

Salt and pepper to taste

Combine all ingredients in a food processor and blend until smooth.  If the mixture is too thick to blend add some water one or two tablespoons at a time to get the right consistency.  You can eat this right away make it several days before serving, it will hold for three or four days.  I serve it with croutons, but it’s also great as a sandwich spread, or to serve alongside grilled meats.

Makes about 2 cups.
