This recipe takes “Cheesy” to a new level!
Because there aren’t already enough ways to enjoy potatoes and cheese, here’s another one for you! Roasted fingerling potatoes, topped with cheddar and jack cheese and green onions. Of course you could take this further and add sour cream and bacon bits, then they would be fully loaded cheesy fingerling potatoes. This is a cheese and potatoes recipe you’ll want to make over and over again.
Ingredients:
1 pound fingerling potatoes, cut in half lengthwise
2 oz. butter, melted
1 t salt
1/4 t freshly ground pepper
1 C shredded cheddar and jack cheese mix
1 green onion, sliced
Directions:
Heat the oven to 400F
In a medium bowl combine the potatoes with the melted butter, salt, and pepper.
Lay the potatoes in a single layer on a baking sheet with sides.
Place in the oven and cook the potatoes until they are golden, about 15-20 minutes. Half way through the cooking time use a spatula to rotate the potatoes to brown evenly.
Remove from the oven, add the cheese and green onion and return to the oven to bake until the cheese is melted and beginning to bubble and brown, about 5-7 minutes.
Eat immediately while hot and gooey. I like to put hot sauce on mine.
