Marmalade and Pancakes – What could be better!

Some friends of mine recently went to Greece and brought back the most delicious marmalade I’ve ever tasted.  It’s intensely orange with the right amount of sweetness and no bitter aftertaste. I wish I could tell you the name of it, but I can’t make it out. The logo is ornate and my Greek isn’t that good. There is no listing of ingredients so I can’t even tell you what is in it. Nor do I know if it’s a spoon sweet, jam, or marmalade. But I can tell you I’ve been enjoying it on as many things as I can think of, including these oatmeal pancakes. My small little jar is about half full, so I guess I’ll have to go to Sifnos, Greece to buy some more.

In a recent musing of what to put it on I came up with this breakfast combo.  Oatmeal pancakes with tangerines, yogurt, and my magical orange jam.  The oat pancakes are something a friend of mine makes frequently and we have had many email exchanges on her variations and over the years she’s discovered the best thing is to let the oats sit all night.  Fortunately I remembered to soak my oats so I was able to enjoy my pancakes this morning.

This recipe makes a single serving pancake, so feel free to double, or quadruple depending on how many people are eating.  And since you most likely don’t have a magical little jar of orange spoon sweet/jam/marmalade from Sifnos Greece sitting in your fridge, feel free to use a good quality orange marmalade instead.  Or finely chopped high quality candied orange rinds.

Ingredients

1/2 C oatmeal
1/2 C milk (or water or almond milk)
1 egg
1 T brown sugar
1 T oat flour
pinch cinnamon
pinch salt
Butter to cook the pancake in
Yogurt
Orange Marmalade
Tangerine Segments

Directions

Put the oats and milk in a small jar with a lid.  Shake to combine, cover and store in the fridge overnight.

The next day combine the soaked oats with the egg, brown sugar, oat flour, cinnamon, and salt.

Heat butter in a small skillet and cook the pancake on medium heat until cooked through and golden brown, about 2-3 minutes a side.

Place on a serving dish and garnish with a dollop of yogurt, a dot of marmalade and tangerine slices and eat immediately with a strong cup of coffee while watching the cooking shows on PBS.

Serves 1.
