Fennel Apple Salad with Turmeric Dressing

The fennel and apple in this salad are good for digestion and the turmeric helps to reduce inflammation.  This is a crisp, refreshing salad that makes fennel lovers out of everyone who tries it.  Most stores carry fennel, it may also be labeled “Sweet Anise”.  If you can’t find fennel, substitute ½ cup thinly sliced celery.

Ingredients

Scale

2 C salad greens of choice

1/4 bulb of fennel, sliced thin

1/2 green apple sliced thin

1 green onion, sliced thin

Protein of choice (leftover grilled chicken, white beans, steak, salmon)

1/4 C carrot juice

1 T extra virgin olive oil

1 t apple cider vinegar

1/4 t ground turmeric

Salt and pepper to taste

Instructions

Place the salad greens, fennel, apple green onion, and protein in a serving bowl.  

Whisk the carrot juice, olive oil, vinegar and turmeric together and pour over the greens.  Season to taste with salt and pepper.

Notes

Fennel can be sliced ahead and stored covered in the refrigerator up to a week.  If bringing this salad to work, pack the dressing ingredients in a separate container to add right before eating.
