The turkey was inspired by the incredible Zuni Roast Chicken, which is crispy skinned roast chicken served over bread salad. I think roasting a turkey is the biggest stumbling block for most people and using turkey breast only is a quick, moist, approachable solution. I kept the traditional flavors in the rest of the menu, simplifying the recipes, and of course including a pumpkin tart for dessert. In order to make this as stress free as possible I provided an outline of how to put this menu together. With good organization this menu can be completed in a couple of hours.
