Fresh Sautéed White Corn and Zucchini

A delicious vegetable medley featuring corn and zucchini, with a hint of savory bacon and shallot.

Ingredients

Scale
  • 1 T butter
  • 1 slice of bacon, cut into thin strips
  • 1 shallot sliced
  • 1 large zucchini cut into 1/4” dice
  • 4 ears of white corn (white corn is extra sweet, but yellow corn is good too), kernels removed, cob discarded
  • 1 t salt
  • Freshly ground pepper

Instructions

Place the butter and bacon in a large skillet over a high heat.

Cook until the bacon starts to render its fat, about 2 minutes.

Add the shallot and cook to soften the shallot, about a minute.

Add the zucchini and sauté until the zucchini is tender and golden, about 5-7 minutes.

Add the corn, salt, and pepper and cook until the corn is tender and sweet, about 3-5 minutes.

Serve right away.
