Ingredients

3 oz. pasta (I used thin spaghetti)
1/2 C Greek yogurt
1 C arugula
1-3 oz. smoked mackerel filet
1 t lemon zest
Freshly grated pepper to taste

Instructions

Cook the pasta according to the package directions.  Drain.

Place the hot pasta back in the hot pot and add the yogurt and arugula and stir until the arugula wilts (no need to turn on the stove, the heat of the pasta will wilt the greens).

Add the mackerel and lemon zest, season with pepper and serve.

Serves 1 (ok, kind of one and a half, I had leftovers the next night)
