Try this on top of a pulled pork sandwich – yum!

1 head cabbage cored and sliced thin (you can also use a large bag of coleslaw blend)

3 green onions sliced thin

1/3 C peanut butter

1/3 C apple cider vinegar (I always use Braggs Apple Cider Vinegar)

½ C mayonnaise

1 T Dijon mustard

1 small clove garlic, minced

Salt and pepper to taste

Roasted Salted Peanuts (optional garnish)

Place the sliced cabbage and green onions in a large bowl and set aside.  In a small bowl whisk together all the remaining ingredients.  Pour the dressing over the cabbage and toss until the cabbage is evenly coated by the dressing.  Makes about a quart of slaw.
