Gruyere and Chive Biscuits
These biscuits should be served hot out of the oven. If you can find smoked honey it really adds to these cheesy biscuits.
3 C flour
1 T sugar
1 T baking powder
1 1/2 t baking soda
1/2 t salt
2/3 C butter, room temperature cut into pieces
2 oz. Gruyere cheese, shredded
1 T chives
1 egg
2/3 C milk
Heat oven to 375, line a cookie sheet with parchment.
Place flour, sugar, baking powder, baking soda, and salt in a medium bowl and mix well. Add the butter and mix until the mixture resembles coarse meal.
Add the shredded cheese and chives, mix to distribute throughout the mix. Add the egg and milk and work the mixture to create a soft dough. Add more milk if the mixture is too dry and crumbly, but only add a little at a time so that the mixture doesn’t get too wet.
Turn the dough onto a floured work surface and pat into a thick square. Cut biscuits with a cookie cutter and place on the prepared pan. Press scraps together and continue to cut biscuits until all the dough is used up.
Place the biscuits in the preheated oven and bake in the middle rack for 16-20 or until the biscuits are golden brown.
