This cake is moist and tender. I served it with cinnamon flavored whipped cream, but you can also enjoy it plain or with sweetened yogurt.
The key to this recipe is good chicken stock. There are times when I think store bought chicken stock or broth is just fine, but this isn't one of those times, it's worth the time to make the real deal.
Claire loves all things mango. We use other fruit purees, so why not mango?
