I love how coconut oil makes baked goods extra crispy, and how coconut milk makes them extra tender and wanted to know what would happen if I put them together in a biscuit.

Roasted Kabocha Squash with Tahini Sauce, Pomegranate Seeds, and Feta

Kabocha squashes are smaller than traditional pumpkins and have a dark green skin that can have flecks of orange on it.  Kabocha has to be cooked to be enjoyed and has a distinct flavor and almost waxy texture.

Pumpkin Tahini Cookies

I was curious to see how tahini and pumpkin puree would taste together in a cookie spiced with cinnamon and dotted with bittersweet chocolate chips, and I'm here to tell you, it tastes great!

My nutritionist buddy, Lulu Cook, the co-author of The Complete Anti-Inflammatory Diet for Beginners has been encouraging me to eat protein, about 20-25 grams per meal to be exact. Scanning what was in the house I realized I could throw a pasta dinner together quickly.  I had Greek yogurt, arugula, smoked mackerel, and lemon zest.
