Some friends of mine recently went to Greece and brought back the most delicious marmalade I've ever tasted. It's intensely orange with the right amount of sweetness and no bitter aftertaste.
This is the season for Asian pears and pomegranates so I combined the two in this salad with shaved fennel and baby kale.

Kabocha squashes are smaller than traditional pumpkins and have a dark green skin that can have flecks of orange on it. Kabocha has to be cooked to be enjoyed and has a distinct flavor and almost waxy texture.
